curry_yogurt_dressing_ingredientsI recently was asked to bring a salad to a potluck. Since I, too, eat foods without gluten and casein I took the opportunity to try out a new recipe. This salad turned out to be a big hit with the group; hope you enjoy it too!

Fruit Salad with Curried Yogurt Dressing

1 bag Torn Spinach Leaves or Spring Mix

1 organic apple, cut into small cubes

1 organic pear, peeled and cut into small cubes

1/2 cup raisins

1/4 cup sliced almonds (if you can eat nuts)

Dressing –

2/3 container of So Delicious plain coconut milk yogurt

2 tbsp lemon juice

1 pkg Truvia sugar alternative

1/2 tsp curry powder

1/4 tsp cinnamon

In salad bowl, toss together salad ingredients. In small mixing bowl combine dressing ingredients and mix well.  Spoon over salad and mix well. Serve immediately.
